Il
Faé produces two distinct wines. We produce a Cabernet
Sauvignon, and the main wine of the area - the Prosecco.
Prosecco is an indigenous vine, intensely cultivated on our hills since the early nineteenth century. Its origin is now lost in time, but appears to be linked to "Pucino", a famous and much valued wine in Roman times.
It
is not an accident that this vine is only to be found here, as this area creates
the ideal condition for producing a light wine with an intense
and captivating bouquet. The hills are formed of marbles,
sandstones and conglomerates, with numerous south-facing slopes and a climate
charactrised by abundant rainfall, and mild temperatures from April to October.
The length of the summer, and the warm temperatures in the summer allow for
a long ripening season.
Sparkling Prosecco IGT
The average age of our vines is 4 years old, and each vine produces 3.5 – 4.2kg of grapes on average.
The wine is made by a soft squeeze of the grapes and a fementation with selected yeasts at controlled temperatures. The wines should ideally be served at a temperature of 8–10 °C.
Our
Rosso di Crevada is a Cabernet Sauvignon
wine. It is grown in vineyards on clay soils, on vines with an average age
of 10 –15 years old.
The average yield is 3 - 3.3kg per plant, and it starts off white in colour - the wine is made in red through the maceration of the skins in a controlled temperature environment.
This wine is best served at a temperature of 16 - 18 °C.
